I am just going to warn you this recipe takes long, but the end result is delicious.
I grew up eating these and I decided to make these to bring to a Caribbean Party my friend was hosting.
Black-eyed pea puffs
One and half ponds of black eye peas (beans) For mine I used 2 bags
salt to taste,
Habanero peppers to taste (seeded and chopped)
3/4 cups of egg white
oil for frying
I soaked the peas in water for 24 hours and started peeling the outer skin the following day, it took me 4 hours to peel them. In a food processor I grind the peas, and the peppers together in batches, then in a big bowl I mixed in the salt and egg whites until consistency of cookie dough.
I pour the mixture with a table spoon in the oil , turning them until golden brown all over.
I made approximately 75 puffs, eat them while hot.
